How It’s Made – The Soulful Bihari Way:

It all begins in a quiet kitchen, where the aroma of tradition hangs in the air.

🫙 First, jaggery is slowly melted in warm water — not rushed, but stirred gently until it turns into a golden syrup, releasing the sweet, earthy fragrance that marks the beginning of every Thekua tale.

🌾 In a wide thali, coarse whole wheat flour is mixed with grated coconut, freshly ground elaichi (cardamom), and a touch of ghee. The melted jaggery is poured in gradually, binding everything together into a rich, soft dough — neither too loose nor too firm, just like grandma used to make.

🙌 Then comes the most artistic part: hand-shaping the thekuas, often using traditional wooden moulds engraved with intricate floral designs. Each piece is pressed with care, a tribute to the hands that shaped it before ours — mothers, grandmothers, and great-grandmothers. 

🔥 The thekuas are then deep-fried on low flame until they turn a deep golden brown. As they fry, the kitchen fills with the sweet, spiced scent of coconut and cardamom — a smell that stirs memories and stirs hunger at once.
